"The heat definitely causes the air bubbles. I know it's a pain and it takes longer, but I just keep putting the cake back in the fridge when it's hot."

Okay! I am missing something! I have made several cakes in which the customer requested vanilla fondant. the problem is after a few minutes have passed.. air pockets begin to surface. I use a very small pin to puncture but it just keeps coming back. One of the tiers icing totally fell to the bottom of the cake and i have no idea how or why. Hi Connie, that's great someone else from Houston. Thank you for your compliment. Your cakes are good too. I took one beginner class in the sugarland area at the cake craft shoppe, maybe you know where it is. I didn't take anymore since my husband is unemployed, so I started to watch youtube and the internet is very helpful. How did you start? Are you selling your cakes?

Connie, thank you very much. I took the first Wilton Course to learn how to make roses and then I taught myself how to make the rest. I used Wilton's book, "Tiered Cakes" as my guide and there are many wonderful videos on Youtube that are quite helpful, also.
