Heck Linda - I know what you mean by forgetting how.  I've made novelty shaped cakes for so long that on Friday, when I was trying to cover a simple square with fondant, I realised I had to dig deep to remember how to do it - sheesh, pathetic!

Bless you Miss Linda... no need to catch up with my... I'm still a little stunned by that last "show" Wedding cake you did... It was spectacular...!!! I'm still dreaming about it! I'm glad to hear things are settling down for you... I know... it's the middle of August and the kids are back in school... The "old" days it wasn't until  after Labor Day... times have changed... I hope George is doing well... Going back to your "happy place" making cakes will do your spirit good Linda... REMEMBER... the better you feel, the more positive energy you invest in... the more you are able to share that love and energy with others... and if you can, try to take a little quiet time for reflection and prayer every day... even if only 2 or 3 minutes... can make a world of difference!!!

I miss everyone too, Tim. I am trying to get back into the swing of things, now that my two granddaughters are back into school. There isn't so much time that I have to devote to them getting things ready for school, now. I've even gotten two orders for cakes coming up!! Shock! I haven't done any cakes forever!! I hope I haven't forgotten how! As I have been watching everyone's cakes in the last couple of weeks, everyone has turned 'pro' on me in my absence! When did that happen??!!  Now I have to catch up and learn new things from everyone!

Linda and Tammy!!! I didn't see your comments before...!!! Thank You!!! Well coming from the Cake Goddesses like you  (I"m going to get so much slack from Linda for saying that) I'll take it as a huge compliment... I miss you LINDA!!!! :)

THE TRUTH Being... EVERYONE who has made a comment about this cake... I've been on ALL of your "photo" pages and have been TOTALLY blown away and humbled by all of your work... AND inspired to raise my skill levels... And, like all of you... I am always SO excited when something finally goes right... I'm JUST as excited about sharing a pictures or two with my cake friends here as I am giving one of my creations to a friend... ALL the cakes in my photo gallery were all gifts... from the heart!

Sorry Everyone... I accidently "crossed" out my Royal icing thing...

Here goes:

Royal Icing can be a pain: barometric pressure, humidity and other factors can get in the way... but here is my basic recipe:

5 egg whites or the equivalent in dried egg whites

2 pounds of Powdered Sugar

4 to 5 table spoons of lemon juice

beat egg whites to stiff peaks (however long that takes you) Ad Sugar, beat like crazy. ad lemon juice... beat like crazy... This is always a good 12 to 15 min for me... Still, I'm checking out Alton Brown's recipe on the food network as well...

I'll check it out...!! Thanks June...!!! I have a tendency to "over" do everything... on the cautious side...

still it always takes me about 15 min to make royal icing...  AND June... you must share your lemon meringue pie recipe...!!!

It doesn't take me that long to make my royal icing Timothy. I use Alton Brown's royal icing recipe from the Food Network. Easy Peasy!! 10 min..tops. Great to work with.

By the way, even if I do say so myself....I make a incredibly wicked lemon meringue pie...Mmmmmm.....my special recipe never fail meringue.... with amazingly high fluffy peaks  :0)

Tim were the roses made of royal icing, for some reason I am very scared of royal icing, I have to get over it.
