When I do number cakes, I bake cakes in 1/2 sheet pans and usually do two layers and carve the number out of the sheet cakes.  Just mak sure your cakes are slightly frozen before carving.  You can use the leftover cake to make mini cakes or cake pops.  I hope this helps. MarvaSee More
