I just found out (by accident) that if you add Karo syrup to marshmallow fondant it hardens very nicely, that is what  i used on the drape and carnations on my winter wedding cake

I am Cindy from Circleville.  I learned to decorate at the age of 17.  I am now almost 51.  I have been learning alot since the invention of the internet.  I work with gumpaste, fondant, royal icing, buttercream, whipped icing and willing to learn anything else that i run across...lol. I have been working at Kmart supercenter for the last six weeks in the bakery learning new whipped icing techniques.  Nice to meet all of you!

Hello, I am Jackie from the Blanchester/Lynchburg area. It's about an hour east of Cincinnati. I have been decorating cakes for almost a year now. It's just something I decided to try one day and was immediately hooked. I haven't taken any classes, although I plan on it after the holidays. I'm comfortable with fondant and gumpaste, but I struggle with the buttercream. I am also happy to be a part of this group :)

I don't use a cooked icing on hot humid day as it will slide right off the cake. Otherwise I use extra meringue powder in my butter cream. (pray a lot. :)

Colleen, humidity is something that we struggle with here in Ohio. Making icing on a humid day is a real challenge. All I can say is, crank up the AC on those humid days! When I'm making icing on a humid day, I don't add any liquid until the end. I mix up my fats (butter and shortening) and sugar first and then I add any liquid. Sometimes the liquid is not neccessary. I used to work in a cookie store and last summer we moved into a house that was built in 1865...it had a dirt floor in the basement...our icing was never the same. We struggled with it on a daily basis.
