Cake Decorating Community - Cakes We Bake

so i freeze my cakes, 2 layers of plastic and one of foil. how to to thaw them? plastic on or off? how far in advance do you thaw them?

If I have so much cake that I have to freeze them I thaw them in just the plastic and then take them out of the plastic to air dry for a couple of hours before I ice them...but my cakes are very moist anyway...so drying the crust doesn't dry them out. If you don't do that they will be soggy ...anytime you leave cake in plastic it will be soggy. Some people think that is moist...but moist and soggy are not the same thing. I wrap mine the same way....plastic and foil. I don't know how long it takes them to thaw completely. Seems like it isn't that long though. I would think that if you take them out a couple of hours ahead...by the time you finish decorating them they will be completely thawed...unless you are super speedy. we bake on Tuesday and Wednesday...make flowers and such those days too. Ice on Thursday, Decorate on Friday and deliver on Saturday (at least that is always the plan! ) If we take the cakes out of the freezer on Thursday morning early they are ready by the time we have boards, fillings and icing ready to start putting them together. no, my cake is not very big...but i have 4 of them...by saturday, and i just do this in the evening after work. so i was thinking if i freeze them it may save time. so you take off the foil and let them thaw in the plastic for a bit? i've also heard thawing them in the fridge helps (still in plastic) i even thought about putting it undecorated in the fridge wrapped...never done that....

i take the cake that is going to to be the bottom layer and unwrap it and put it on the board and level it, the other i loosen the wrap and cover with a paper towel, and let the moisture release. level if needed, i like to be able to slide my hand under the saren wrap to place second cake, and let sit for the moisture. it doesn't take very long for 2 rounds to completly about maybe 3 hours. when you bc the middle you should alway let the cake settle to avoid bulges, also with fondant just a light crumb coat and also let it set some people put something on top to avoid bulging on the sides of fondant like one lady used a extra 12x12 ceramic tile from when she redid her bathroom, my first one bulged to much bc coating and didn't let it set.
