An all-cake, 3-tiers topsy-turvy cake to celebrate a 1 year old's birthday.
Cake adorned with 3 all-fondant baby dragons, as birthday boy was born the year of the dragon (Chinese zodiac calendar)
Each tier is made of carved cakes, crumbcoated using ganache and then covered with fondant.
Upper cake tier sits on a flat base made by carving the lower tier, and setting the base with dowels for weight support.
Main challenge:
1. The 2nd dragon was latched to the 2nd tier ledge i.e. the weakest section of the cake (weakened due to carving). To ensure the weight of the solid fondant dragon does not drag down/collapse the ledge, the 2nd tier was made with double layers of fondant (2nd layer applied after first layer has dried) and the dragon is also supported by long thin satay sticks that extends to the center of the tier.

Decorations made.of fondant. Dragon wings made using gumpaste.
Total cake height approx 20 inches.
