I am new to cake decoratinng, does anyone know if it is ok  to freeze buttercream I thought if I could freeze it, it would cut down on time, I make cupcakes so if im making lots of differant flavours it takes time. your thoughts on this would be very helpful. thanks guys!

I always freeze any left over buttercream and reuse them when I need them and they always turn out OK. Try a little bit if you have doubts and see if you like the outcome. I even have some that are over a month old in my freezer at the moment.

That's an absolute yes to your question Jackie.  I do it all the time, particularly at Christmas when I know I am going to have several orders for chocolate logs.  Sometimes the butter icing will look a bit strange when you take it out of the freezer (perhaps a marbled effect or similar if it's a coloured or flavoured one).  Don't panic, just wait for it to defrost and then give it a good beating!  It will recover perfectly and taste exactly the same.  Like Titi, I also freeze any left over bits and bobs - waste not want not.
