I made icing for a wedding for this Saturday in which I need purple, I used Americolor gel and the icing is blue not purple? How can I fix it or get purple? It didn't happen to my fondant, I made buttercream icing using only shortening. I left it sit overnight thinking the color would change but its still blue. I have seen the Wilton violet separate colors before but never had it turn completely blue. Do i add a little red? Will the colors change once the cupcakes are iced?

The only thing I know to suggest with buttercream, Wendy, is to spray it with purple once the cupcakes are frosted.  I've used Wilton's spray cans and they work pretty well.  You could try adding red to a small amount of the frosting to see what color results.  I've tried that with gum paste and it makes a muddy color, almost brown.  I think it depends upon the type of colors being used.

100% shortening icing doesn't take food colouring well. That's why I do 1/4 shortening and 3/4 butter. If I were to add colour, I add it to my milk...so your essentially adding coloured milk. Slightly warm milk also takes on more colours. I agree with Sandra, take a small batch and add a small amount of red, see if that helps. If you achieve purple, add a couple of teaspoons of baking soda. That sets the colour of your icing. Colour will stay. Another option is to make a small batch of all butter bc ( you can substitute margarine ), make the batch super dark purple. Add some baking soda to set the colour. This way, when added to your original batch, should be a nice colour of purple. Hope this helps...

thanks for the info. ladies, I did add some electric pink and got purple but its not exactly the shade I wanted. It is a little muddy looking I think and I did use 100% shortening! Good to know for future! I also had a time with getting a dark pink fuscia color. Thankfully, the bride is not picky at all and its for cupcakes.
