Thank you, Katy.  That is so sweet and please thank Tracy for me, as well :o)  Did you show Tracy the "before" or "after" picture of the Scarlet Macaws cake?  I know for sure the "after" made MY jaw drop!

I did check out Tracy's page and it is certainly our loss that she has not had the time to play with us because she is fabulous.  And not only is she an incredible decorator, the little bitch is young and beautiful, too! (please know the term is used as one of affection, not insult)

And it was' FLUFF' on the larger container, for the marshmallow buttercream.  My hubby just now asked me, after looking at the site here, if the icing on his BD cake had been buttercream, because it tasted, and SMELLED, a lot better than usual. lol  He does not like the sweet smell of buttercream. so I told him it was marshmallow buttercream, and he could relax, it was not pure sugar!

2. Place the egg whites and cream of tartar in the bowl of a stand mixer fitted with a whisk attachment. Start whipping the egg whites to soft peaks on medium speed. (The goal is to have the egg whites whipped and ready, waiting for your syrup to be drizzled in. If they’re whipping faster than your syrup is coming to temperature, just stop the mixer until the syrup is ready.)

3. When the syrup reaches 240°F, reduce the mixer speed to low and slowly drizzle about 2 tablespoons of syrup into the egg whites to warm them. (If you add too much syrup at once, the whites will scramble.) Slowly drizzle in the rest of the syrup. Increase the speed to medium high and whip until the marshmallow crème is stiff and glossy, about 7 minutes. Add in the vanilla and whip 2 minutes more. Use immediately or refrigerate stored in an airtight container for up to 2 weeks.

Marshmallow crème doesn’t have to come out of a jar, as Shauna Sever, author of Marshmallow Madness! Dozens of Puffalicious Recipes, demonstrates in this CHOW Tip video. Just slowly pour hot sugar syrup into egg whites and whip until the mixture reaches a fluffy, stretchy, gooey consistency. This crème is delicious on a peanut butter sandwich, Fluffernutter style; spread between two cookies; or put on top of dark chocolate ice cream.

Special equipment: A reliable candy/fat thermometer is crucial for getting an accurate read on the syrup in this recipe.

INGREDIENTS
  • 3/4 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 1/8 teaspoon fine salt
  • 2 large egg whites, at room temperature
  • 1/4 teaspoon cream of tartar
  • 1 1/2 teaspoons pure vanilla extract
INSTRUCTIONS
  1. Stir together the sugar, corn syrup, water, and salt in a small saucepan over high heat. Bring to a boil, stirring occasionally, until the mixture reaches 240°F on a candy/fat thermometer.

I have used my smaller 8oz, & larger 1lb. jars, but I think the 8oz jars said Jet-Puffed, & the 1lb. jar said Fluff.  I feel sure that under the words  Fluff, it will say marshmallow cream.   Will let you know when I go get some more, OK?

Don't mean to go on & on, but things keep popping into my  head.  I actually use Crisco & butter flavoring in place of the butter, some family members are lactose intolerant, so I make this sub automatically all the time.  Tastes great either way.

One brand of Marshmallow cream is called Puffs over here, any will do.  Just can't use regular marshmallows.

Katy, I think you will like it, because it is not too sweet.  Doesn't taste like buttercreram, and holds up in warm weather a lot better than buttercream, in my opinion anyway. 

 Marshmallow Creme Buttercream

Ingredients

  • 1 lb (4sticks) of unsalted butter, softened
  • 1 lb  marshmallow cream (2-7oz jars,or 1-16oz tub)
  • 2 cups confectioners' sugar
  • 2 tsp vanilla (sub another flavoring for 1 tsp).

Instructions

  1. Beat butter in a large bowl w/mixer on medium speed until creamy.
  2. Beat in marshmallow cream.
  3. When well blended, beat in confectioners' sugar and vanilla.
  4. Increase speed to high and beat 3 to 4 min until fluffy.
