I do not like making red velvet because of the red dye.  I read somewhere someone used beet juice for part of the liquid.... not sure what that would do to the taste but the red dye is really so bad for you.

Red Velvet side effects

Hello all, I love to try new recipes and being from Canada I wasn't too familiar with red velvet. I tried a few crappy recipes and finally tried the one on the Wilton website last week. I was kinda hesitant on using the color gel but went ahead and followed through, although I could taste the color they still tasted pretty good the only problem was went it came time to do the doo in the bathroom. I always make mine with a 70% or above cocoa content.  Let us know how it works... I love Dove chocolate... mmmm wonder what ganache with Dove would be like.

I always bake and freeze about 20 minutes after it comes out of the freezer. I thought it was frowned upon but they always taste wonderful once they are properly sealed before going into the freezer.   I don't know why I never baked a few…
