"June as I understand they say Marzipan have rose water and almond paste have almond extract, I look in the Wilton book and it have the almond paste to make marzipan..  I when on amazon and they have RENshaw rolled  marzipan ..."

Hi Les.  Just thought I'd let you know that the Christmas Cake with your wonderful recipe turned out really great.  I had to trim the top off to flatten it a bit and so of course the trimmings had to be tasted.  Deeelicious!  Hubby says it's the best fruit cake I've ever made.

Good to know there's another man playing with eggs flour and fondant !! And a Brit !! Lol Don't put your talent down. You should see some of my early ones , it's taken 9 years and several hundred cakes to get this far , and I'm still learning !!

Can you get a powdered lemonade mix of some sort??  If not Les, just use extra lemon juice and colour the batter pink. :o)

A man as good as his word!  Thanks so much Les.  I am indeed wanting this for Christmas cake as well as general 'consumption'.  My husband's favourite cakes are Victoria Sponge and Fruit cake.  I can do Victoria Sponge standing on my head with my eyes shut, but the perfect fruit cake still eludes me.  So I will do as you suggest and make it in the first week of October (I remember my Mum always made it around that time, sometimes earlier).  Thanks again and have a great weekend.  btw I notice I missed your birthday in August, so happy belated's.  A Leo eh - I'm sure the recipient of this wouldn't mind sharing with you -
