Hi Theresa!  Thank you for adding me to the group, I wanted to clarify what I understand before signing up.  This is a membership to an online source of videos with occasional classes that will come somewhere within my vicinity throughout the year.  The amount of classes that will be avaliable to me is probably yet to be determined, and the video class frequency is probably yet to be determined as well - since instructors are still being located.  Also, there will be discounts on supplies offered.  Does that about sum it up?  Thanks so much!

Are the classes being taught in PA - I don't see a reference to that part.  Thanks!

January 2012

Dear Instructors,

Your enthusiasm for this F-A-N-T-A-S-T-I-C project is contagious!
Thank you for your questions, which I am going to answer collectivelyl.

1. What exactly do you want us to do on the video?

Remember that this takes place of your interview. The committee wants you to show us “you at your best”. Show us the highlights of a 3day class. eg. A rose: show us making your first petals, then somewhere in the middle of the construction, then the end.

2. Do you want us to do a complete 3day class?

No, just the best highlights of what you teach in that 3day class. Explain your syllabus showing us your working on some techniques. Show us display pieces done by YOU! And send photos. Video time should be between 30-90 minutes.

3. Do you want us to tell you about ourselves?

Absolutely, sell yourself, tell us about all your achievements, how long you have been teaching, and why you want to be part of SAI!

4. What is our deadline?

23rd January, 2012. Please adhere to this deadline date.

5. I have not competed or competed recently so do I still qualify?

This seems to be a common issue. We do not want to turn away skilled instructors for this reason. We will organize in-house competitions later in the year, SO go ahead and submit your applications.

6. Will I have to pay to become an Instructor?

ABSOLUTELY NOT! Instructors get paid for their services. The pay rate depends on the level of skill of the instructor (so show us your best on your video). Professional and non-professional videos are acceptable. FOUNDING-INSTRUCTORS working with us to develop the syllabi will get
LIFETIME FREE MEMBERSHIP and other privileges previously mentioned in previous mails.

7. Must I teach a specific syllabus or can I teach my own agenda.

We will take your agenda into consideration. However, we are going to pick the best of the best. The SAI curriculum will be world wide, standardized courses and must be taught to the “letter”.

8. What about getting tools and supplies to the venue?

SAI will take care of all administrative work and the provision of supplies. Each course will have full tool kits included in the course fee. The instructor may arrive at the teaching venue empty handed. Kits will be waiting to be placed on the workstations. SAI will make teaching and travelling as streamlined and as easy as possible for both instructors and students.

9. Do I have to travel? ABSOLUTELY NOT.

Let us know what suits you. We will accommodate your requests to stay “home” or to travel.

10. Who pays our traveling expenses?

We will cover all reasonable traveling costs, to include
airfares/long distance driving, venue costs, hotel accommodation, lunch or per-diem.

11. When will I know if I am chosen to teach?

Our goal is the end of March.

12. I hate gossip! Negativity and detrimental remarks about one-another is forbidden. SAI is ethical with the highest of standards. “Secret Students” will help us ensure our standards are met.

You will be proud to partner with SAI. Our organization is prestigious; our standards high!

The Sugar Arts Institute is moving forward in leaps and bounds.  The
interest worldwide has been phenomenal.  We are three months ahead of
schedule, hence this letter.  We are writing to you specifically
because of your excellent reputation and sugar art skills.  SAI will
be the most respected and prestigious organization in the sugar arts
industry.  We are already receiving the most positive recognition,
even though we will only officially launch in July 2012.  This is an
official invitation for you to partner with SAI.  Partnering with SAI
will ensure that you remain at the top of your field and in the
forefront of this industry.  We will constantly and aggressively
promote and market you.

SAI has pending classes required in Hong Kong, Germany, Holland,
Australia, New Zealand, Malaysia, Italy, Holland, Mexico, Costa Rica,
Argentina and South Africa.  Not to mention classes on demand here in
the United States. We are now booking instructors for teaching in
2012, 2013 and 2014.  Founding Instructors will be included in our
published books and on the future television show that we will be
presenting to the networks.

We realize that you are very busy and probably booked for most of
2012, so we have reduced the required number of classes to two in
2012. Thereafter, we require your teaching the minimum of four classes
per year.  We will start marketing you NOW, to fill up classes not
only next year, but for 2013 and 2014. Of course you are welcome to
teach your own agenda outside the SAI classes as an SAI Certified
Instructor.

We will provide our Founding Instructors with honorary degrees based
on their level of skills, which will be determined in a video that you
make for us showing the highlights of a three-day class.   This will
also determine your salary level.  The videos will also be used in the
advertising and marketing of our instructors.  We will show snippets
on our website, grab photos from the video, of you at work.  You may
even develop your own team and receive a percentage of the classes
they teach!

Not all renowned sugar artists are good teachers, and there are
excellent teachers who are not famous (yet).  So please don?t feel
indignant at our request for a video.  We want the best of the best.
We will boost your career and provide you with classes to teach
worldwide.    We will take the headache out of the administrative work
and will provide all supplies required for the classes.  All you will
have to do is let us know when you are available, then just make your
way to the venue.

Do not hesitate to call me if you have any questions.  I prefer to
answer questions verbally.  We look forward to partnering with you and
growing SAI as prestigious with high standards.

A Sugar Arts Institute Update

WOW, your responses have been phenomenal! Thank you all for your emails and interest in SAI.  Because we have received so many emails, we are going to collectively share the answers with you.

How do I apply to be an SAI instructor?
The interview process is through video.  This will enable us to
determine your skill level and your teaching skills, so give us your
very best.  Don't worry about making mistakes, we will ignore them,
just keep going.  I want you to present the feature points you cover
in three a 3 day class, demonstrating the best techniques and artwork.
Video to be 60-90 minutes. Your videos will be kept confidential.  No part of your video will be used or shown publicly unless we have your approval and a signed agreement. Please send your dvd to: Julie Bashore, P.O. Box 669, Ephrata, PA 17522.

How does SAI determine the skill level of the instructor?
The video will show us your skill level and how you present yourself
as an instructor.  The higher the skill and teaching level, the higher
the grade level you will be given to teach.  Photos will be the 2
nd part of the interview process and we will not need them initially. You will be contacted in the event we require photos.

  1. Do I have to take a practical exam to become an SAI Certified Instructor?
Not if you become a Founding Instructor. This applies to instructors
who have a proven track record and who become involved in creating the  curriculum. Following our launch in July, 2012 all non-certified instructors  will be required to take a certification exam.

What are you looking for in an instructor?
We are looking for excellent communication skills, professionalism and the ability to effectively teach your class curriculum in line with today’s latest techniques. Instructor should demonstrate in a chef's jacket and with hair back. We hold honesty and good ethics in high esteem.
Malicious talk about others will NOT be permitted.  Discussing
personal information must be kept to a minimum. Your passion and
enthusiasm for sugar arts is essential!  One must have a true
willingness to share one’s knowledge and expertise in addition to
    being patient and reliable.

    Qualifications?
A copy of your high-school diploma is required.  At least 5 years
experience with 2 teaching years in your field of expertise.   In
addition, you must have placed within the top 3 of 3 competitions on
different dates.   A pastry arts diploma is not required.   Details of
college degrees and advanced education will be an added asset.

What specific skills do you require?
We require anything and everything to do with sugar.  Our primary
focus is cake artistry and all aspects of sugar arts. i.e.
buttercream cakes and piping, fondant cakes, fondant cake décor,  gum
paste flowers, work in pastillage, 3D cake carving with the building
of structures, cocoa painting, wafer paper painting, airbrush art,
royal icing to include floating collars, extension work, Lambeth
techniques, color flow and piped flowers, Sugarveil, gelatin flowers.
Blown and pulled sugar, working with chocolate for displays and making  pralines, gel art, pressure-piping modeling of animals and figurines.  We also want instructors for teaching edible art projects for annual  kids’ cake camps.  Experienced bakers/pastry chefs to teach baking,  pastries and desserts.  Bread baking is not included.

Do you want experts in business skills?
Absolutely! Point of sale training, bookkeeping, customer service,
pricing cakes and sugar art, taking orders, hygiene, experts in
culinary equipment, basic CPR, people skills and other relative
    business skills.

    How long is each course?
The courses will be structured for 3-5 days, 8 hours per day,
dependent on the teaching level and the individual course.

How many classes per year are instructors required to teach?
Instructors must commit to teaching a minimum of 2 classes in year
2012.  Thereafter, instructors must commit to 4 classes per year.  SAI
will host an annual “Instructors Cross-Training Conference” where
instructors will train instructors. This may be included as one teaching project.  Instructors may choose  to teach more classes per year.

Who gets the students and arranges the classes?
SAI will aggressively advertise, promote and market Founding
Instructors and SAI courses, both nationally and internationally.
Founding Instructors will have the first choice of classes to teach.
They will be kept in the forefront of our advertising, PR and
marketing campaign.  SAI will handle administrative work and student  registrations.  SAI will “marry” together students with appropriate
    instructors and courses.

As an independent instructor, am I limited to teaching only SAI courses?
No, SAI does not want to restrict your career, but to enhance it.
Providing instructors meet the minimum SAI annual class requirements,  they may teach their own agenda using the prestigious SAI name and  logo to market themselves as Certified SAI Instructors.

Do we provide tools and supplies?
All the tools and supplies will be shipped directly to on-line
students or to brick and mortar venue.  Instructors will not have the
headache of packing and carrying supplies.

Will SAI provide instructors with course content and syllabus?
Experts in education, and professionals in the industry will develop
the syllabi from year 1 (level 1) to year 5 (level 5).  It will be
mandatory for instructors to follow the SAI syllabus using the tools
and supplies provided by SAI, when teaching SAI Certified Courses.
Instructors teaching their private agenda in their own name,
may use their preferred products during such courses.

    Must instructors travel?
Traveling is optional.  Some courses will be hands on at different
venues.  Some courses will be taught by long distance learning through  the Internet.  Some courses will be offered on videos.  The instructor  may choose to stay close to home or travel the world!   Founding  Instructors who travel are SAI VIPs. They will be collected and  returned to the airport in a stretch limousine (where available) or
    similar prestigious service.

    Who pays for travel expenses?
SAI will pay instructors a travel per-diem (dependent on distance).
    SAI will cover hotel/accommodation expenses.

    How do we get paid?
Instructors will receive remuneration for the classes they teach.  The
amount paid will depend on the level taught by the instructor, the
number of attending students and the length of the course.  The rank
of the Instructor will be denoted on the instructor’s jacket sleeve with gold embroidered  stars.  Remuneration will be paid by direct debit.

Does SAI have incentive programs for the instructors?
Yes, as a matter of fact we have a great program, which may increase  remuneration dramatically:

    1. Instructors will receive a commission on the tool sales for each
class and commission will be applied to students’ purchases for 14
    days after the course date.

    2. Level 4 and 5 instructors may become Team Leaders (TL).  They may train their best students to teach their classes at different levels
of expertise.  Team Leaders will earn a percentage of each team
    members course fees.

    3. Instructors will receive applicable course fees for every course
taught, to include brick and mortar teaching, distance learning
teaching and video teaching.  In other words, through modern
technology instructors could be teaching several hundred people, world  wide, at one time.  This could be a huge boost to your income!

    4. Instructors' chef's jackets will be a different colour than those of
    students.

What is the advantage of becoming a Founding Instructor?
    1. Founding Instructors will become an integral part of the SAI
program and will always be part of SAI's history.  They will be
acknowledged with Founding Sponsors and featured prominently on our website and course content.

    2. FI will be marketed and promoted as SAI preferred instructors.

    3. FI will have first choice of courses offered in different countries.

    4. FI will receive a lifetime free SAI membership.

    5. FI will have preferential treatment, eg.  Stretch limousine service
    to and from airports.

    6. FI will receive a free SAI Chef Jacket and hat every year they
    continue to teach SAI courses.

    7. FI instructors will have their name and the prestigious SAI
Founding Instructor name and logo embroidered on Cjs.

    8. FI will be given free business cards, showing SAI Logo and your
business details as long as they continue teaching SAI courses.

    9. FI will be given free promotional material, i.,e. pens, aprons, etc.

    10. FI will receive gift baskets at conferences and conventions.

    11. FI will receive VIP privileges and upgraded rooms when checking
into hotel at SAI conferences and conventions.

    12. FI will have the opportunity to present his/her work in SAI
    published books.

Please feel free to call me personally, should you have any further questions.

I live in southern Delaware (beach area-Sussex County) and am a self taught cake decorator.  I have no idea how to find out about what events/classes demonstration, etc. happen here on the Eastern Shore (other than Wilton classes, of which I have taken to get tips and ideas.)   I am hoping to find some events that are close enough to drive to.  Any suggestions would be greatly appreciated!
