I'm hoping you can help me respond to a client.  This is the scenario...

I had a couple in for a cake tasting and they liked 1 out of the 3 cakes.  The found the other 2 a bit dry.  So I decided to be proactive and tweak some things in the recipe, and bake again and I personally delivered the new cake samples to them, complimentary.

So they really liked the new samples, but she asked me what I had done differently and if I will be able to provide the same consistency for a large order of cupcakes.  

Any thoughts on how to respond to a client? I don't want to give them all the details of what I did and why...but I should respond with something.  And I do want their business...so I want to be as positive as possible.

Your help or feedback would be greatly appreciated.

I would just simply explain to them that the end product is a result of the chemical reaction in the baking of the ingredients.  You took into consideration of what they personal preference was and tweeked the ingredients in the recipe.  Since you plan on using the same recipe, then the end result will be the same.

Yep - what Goreti says.  You don't have to tell them what you did, it's none of their business.  As long as they like the result and you can reproduce it, that's enough for them.  Just say, that you used your experience as a baker and tweaked the ingredients to fit better to their requirements.  Yes you can reproduce for a larger quantity.  Smile pleasantly at them and say it's a trade secret!
