As part of her wedding cake my Granddaughter has requested I make a carrot cake in the shape of an ampersand. I have searched far and wide for a cake tin in that shape, even trying to find a firm that might make one, but without success. Has anyone any idea how to go about this. I would be eternally grateful

Hi Terry.  Rather than type the recipe out here, I have added it to the recipe forum in a spreadsheet format as there are quantities for a variety of tin sizes and I thought it would be easier to read that way.  Here's a link to the post I have created, and the spreadsheet should download to your pc.

Thanks again Katy for your recipe. Tastes really good, but mine comes out a little dry., Just a couple more questions if you don't mind. The grated carrot is really wet, should I dry it out or use it as is? Also, is coarse or fine grated best? This may be why it's a bit dry as I'm not sure if I'm doing it properly.By the way, I found a lovely man on the internet who has made me a great ampersand template. Hi again Terry.  Good news about the ampersand template, that should make life a whole lot easier for you!

As for the recipe, it's quite a while now since I last made this one (I tend to go for Betty Crocker box mixes for a quickie carrot cake, it's so delicious!).  From memory, I did a fairly coarse grate and yes, I do remember it being fairly wet, but I didn't do anything to dry it out.  So I would continue to use as is.  With regard to the dryness, I would suggest that it was a little overbaked.  This is easily done.  So try these little tricks to see if it comes out better.  

Put a bowl of cold water in the bottom of the oven while your cake is baking

Your oven temperature may be just a little 'off', try lowering it just a tiny bit

When you take your cake out of the oven and turn it out onto your cooling rack, cover it lightly with a clean tea towel, this will keep the moisture in while it's cooling.

The other thing that occurs to me now that you have a tin in the shape you want, is that you won't need to carve it, so it doesn't need to be so firm.   If this recipe isn't working out for you, then you could try Mary Berry's recipe.  I love her recipes, they never fail for me!  Here's a link to it (and I not she specifically says coarsely grated carrot) -

Dear Katy, Hello again. Tried yr sugg re water in oven & worked perfectly. Cake is great. I now have a request!! My granddaughter ( bless her !!) has decided she wants bigger!! I'm not too good at adapting cake recipes, so would it be an imposition to ask if you could/would adapt yr ingredients for  a 12in/30cm  sq tin ,for me? Ingredients only as have yr method. If u can I would be so grateful. Got to get a new tin, too!!  Thank you anyway, for all your help. Bye for now,  Terry

Hello Katy. Sorry it's taken so long to send this pic.  your recipe went down a storm, best cake of all ( there 7 with mine, spelling out Jay & Ant. As you can see, after much trial & error, managed the ampersand !!! Thank you again for all your help.
