Chocolate,Chocolate, and Chocolate!
Hi, Everyone. I am looking for a really good and moist chocolate cake and frosting. Does anyone have any good recipes that I can try out?

I alternate between 2 recipes at Allrecipes.com. The first is called Too Much Chocolate Cake. It is one of my most requested cakes. The second, which is much more rich, is Black Magic Cake. In the Black Magic cake, I use Swiss Mocha instead of coffee.

The following is the best chocolate cake recipe I've ever made using a mix....and I think I got it on this site someplace but I don't know exactly who to credit. It's extremely moist, stays moist a long time too. For scratch cakes, the Hershey's cake (on the cocoa box) is awesome.
Chocolate Cake
2 dark chocolate cake mixes
2 C cake flour
2 1/4 C sugar
1/3 C cocoa powder
3/4 tsp salt
2 pkg chocolate fudge instant pudding mixes
8 egg whites or 6 whole eggs
2 C sour cream
2 C coffee
1 C chocolate milk
1/3 C oil
2 tsp chocolate extract
2 tsp vanilla or butter extract
Mix as you normally would--dry ingredients first, then add wet and mix 30 seconds, scrape bowl then mix 2 min. I baked at 325. Also, I didn't have chocolate extract so I used 1/2 butter extract and 1/2 vanilla. And this makes a LOT of cake. I think I made 2 6" and 2 8" plus cupcakes. I think you could cut the recipe in half pretty easily.
For frosting, you can take a regular buttercream recipe and add melted chocolate to it (my usual thing) or if you like a really fudgy frosting, make ganache. Its super easy. Basically you use equal amounts chocolate to heavy cream. Use whichever type of chocolate you prefer for eating. If you're a fan of dark chocolate, then use dark. So if you were to use Ghiradelli baking chips, say 12 oz, use 12 oz of cream. Pour the chips into a bowl. Heat the cream almost to boiling. pour the cream over the chips. Let it sit about 5 minutes, then stir until the chocolate and cream are all incorporated. Put it in the fridge and chill for several hours until it is spreading consistency. Stir once in a while. If you over chill it, just heat it up until it's spreadable. Recently I made this and added too much cream and it didn't set up, so I whipped it and it made a really awesome, light, whipped ganache. It was delish.

I do have my favorite Triple Chocolate Fudge Cake posted in my blog and it is always a winner... Use ganache as the icing and you can't beat it. This cake is a favorite of all my customers... Give it a try!
