Good morning everyone from the UK on this lovely, warm, sunny September morning. Does anyone know how long chocolate ganache will keep for? I'm thinking of using it as a filling in a torted sponge cake which I am then going to attempt to shape and cover in fondant. I know this might be a bit tricky as I'm not sure the cake will hold up under the weight of the fondant, so I need to give myself a bit of extra time in case it all goes pear shaped. I was thinking filling the cake on Thursday, chilling it, covering in fondant Friday for a party on Saturday evening. That way I still have a bit of time to make another, simpler cake if I mess it up. Will the ganache hold up that long? Thanks.

Permalink Reply by Les Brown on September 9, 2012 at 12:53pm should be absolutely fine katy especially if your going to keep it chilled anyway, Ive made chocolate ganache and kept if for 5 or 6 days chilled and still scrummy!!

I've never worked with ganache in any serious way before, but the cake recipient is a chocoholic and one of the guests has a nut allergy. So I wanted to use a ganache for scrumminess, but make it myself for allergy-freeness, using a nut free chocolate. Fingers crossed it works!
